The oldest traces of Italian wine were discovered in a cave near Sicily’s southwest coast. Pasta dishes with tomatoes are trendy, as are many kinds of stuffed pasta, polenta and risotto. Southern Italian cuisine also includes capers, peppers, olive oil, garlic, eggplant and ricotta cheese.
